We are going to kick off our “Littles Teaching Littles” with a kiddo in the kitchen. With a strong desire to learn to cook, Eli got a whole cooking set for Christmas and has worked hard at learning and practicing his new skills. In this video he teaches children just how easy it is to make pancakes. Whether you’re making them for a family of twelve, a family of two, or anything in between, anyone can make an amazing batch of fluffy pancakes. Come along on this journey as he shows his tips and tricks to make sure the pancakes come out just right. Giggle along as he consistently calls the pancake batter “dough”. It’s easy to see his mama is a baker. We make all our own bread so he’s used to hearing his mom work with bread dough.

Eli lives at home with his nine siblings and his parents. He loves cooking, riding his bike, playing outside and doing science projects. Taking on the endeavor of feeding a large family is no small task. He takes it all in stride, it probably helps that he doesn’t know any different. Everything we do is on a massive scale. He will probably never know how to make a small batch of pancakes.

Whether it’s climbing trees, doing chores, riding a bike, or helping at church, Eli always does his best and persists through the challenges of learning something new. Sometimes his pancakes may come out a little wonky donky but he’s sure to look for the bright side and understands they still taste delicious. The end goal is to fill his family with nutritious food that is good for them, and he doesn’t let the little mishaps discourage him. He wants to encourage other children to try new things and to help feed themselves and their family nutrient dense meals as well.

Recipe for one batch of Eli’s pancakes

  • 1 cup of flour
  • 2 T sugar
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup milk
  • 1 large egg
  • 1/4 tsp vanilla extract
  • vegetable oil spray

Mix dry ingredients together, in a separate bowl mix wet ingredients making sure to break up the egg yolks. Combine wet and dry ingredients together and combine well. Once you stop mixing do not mix again as pancakes will come out tough and flat. Spray vegetable oil on griddle, pour out pancake mix using a 1/4 cup measuring cup and cook pancakes at 400 degrees as instructed in video. Enjoy!

Eli’s batch of pancakes

  • 5 cups of flour (we use fresh milled but all purpose will work
  • 10 Tbs sugar
  • 2 tsp baking powder
  • 4 tsp baking soda
  • 1 tsp salt
  • 3 1/2 cups milk
  • 5 eggs
  • 2 tsp vanilla extract
  • cooking spray

Same as above, mix together and cook on electric griddle. Can also be made on a frying pan on medium high heat.
